Saltfish (Cod Fish) And Beans

Ingredients
Directions
1/2 lb. saltfish (salted cod fish)
1 398mL can beans with tomato sauce
1 medium onion, sliced
1 large tomato, chopped
1/2 sweet pepper, sliced
1/4 teaspoon ground black pepper
1/4 cup vegetable oil
3 cups water
1. Bring a pot of water to a boil, add the saltfish to remove excess salt. About 20 minutes
2. Discard the water, wash saltfish with fresh tap water
3. Flake the saltfish, removing the bones
4. In a frying pan, heat the vegetable oil over low flame until it sizzles
5. Add onion, sweet pepper and tomato and saute until translucent. About 3 minutes
6. Add black pepper and stir
7. Add saltfish and cook for 3 minutes, gently stir
8. Add beans with tomato sauce and cook for 3 minutes, gently stir
9. Remove from heat and serve
