Bell Pepper Egg-In-A-Hole (Egg In A Hole)

Ingredients
Directions
1 red bell pepper
3 large eggs
1 pinch salt, to taste
1 pinch ground black pepper, to taste
1/4 cup grated cheese, I used Gruyere
1 tbsp. coconut oil
1. In a large skillet, heat the coconut oil over medium heat
2. Cut the bell pepper into 1/2" rings and remove the seeds and centers. Place sliced peppers into the skillet and let them saute for a minute
3. Crack one egg into the center of each bell pepper ring. Some whites may leak from under the bottom of the rings. Just press down on the rings with a spatula to minimize leakage
4. Sprinkle salt and pepper over each egg. Allow eggs to cook to the desired doneness
5. If you wish to have the yolk cooked medium or hard, then cover the skillet with a lid to trap the heat in and allow the egg yolk to cook
6. Top with a generous amount of cheese
