Directions
4 lbs. picnic pork
2 cups Jamaican Jerk Sauce (see Nisha's Jamaican Jerk Sauce recipe)
1/2 tsp. sea salt
1 Scotch Bonnet pepper (sliced), for garnish
1 medium white onion (sliced), for garnish
1. Rinse pork under cold water and then pat dry with paper towel
2. Place the pork in a bowl
3. Pour 1 cup of the Jamaican Jerk Sauce and 1/2 tsp. sea salt over the pork
4. Cover the bowl and marinate for 4 hours or more
5. Remove the pork from bowl and wrap in aluminium foil
6. Cook the wrapped pork on charcoal grill for 2 hours, turning after an hour
7. Remove pork from the grill and aluminium foil and cut into bite size pieces
8. Place pork and remaining Jerk Sauce in another bowl and stir to evenly distribute the Jerk Sauce
9. Place pork in a vegetable grill basket
10. Place vegetable grill basket on charcoal grill for 5 to 10 minutes, turning pork half way
11. Place pork in a serving bowl
12. Add onion and Scotch Bonnet pepper, for garnish
13. Serve
