Directions
2 lbs oxtail medium cut
1 tbsp lemon juice
1 medium onion (chopped)
3 cloves garlic (minced)
1 medium carrot (diced)
¼ to ½ lb white potato (diced)
½ tsp salt
½ tsp all purpose seasoning/ meat season
½ tsp garlic powder
½ tsp onion
1 tsp pimento beans crushed
½ scotch bonnet pepper (optional)
1 ½ cups dried lima beans (cooked)
2 tbsp vegetable oil
1 tsp gravy browning
1 ½ cups water
3 tbsp ketchup
1 tbsp brown sugar
1. Wash oxtail with lime juice and water
2. Add onion, garlic, salt, meat season, garlic powder, onion powder, pimento, ¼ tbsp gravy browning and pepper
3. Marinate for 1 hour or more
4. Add oil to pot and heat over medium heat
5. Add oxtail to pot and stir fry until meat is brown (15 minutes)
6. Add meat to slow cooker (mode high 4 hours)
7. Mix sugar, ketchup, water and remaining gravy browning add to meat
8. After cooking for 2 hours, then add carrot, potato and lima bean
9. Serve
