Ingredients
Directions
2 ripe avocados, peeled, cored and dice
1 cup frozen whole kernel corn, thawed
1/2 cup red onion, chopped
2 cups Roma tomatoes, seeded and diced
1 clove garlic, minced
3 tbsp. olive oil
3 tbsp. lemon juice, fresh
1/2 tsp sea salt, to taste
1/4 tsp ground black pepper
1/2 cup green bell pepper, chopped
1. In a bowl, add red onion, tomatoes, olive oil, 2 tbsp. lemon juice, green bell pepper, sea salt, ground black pepper and garlic. Mix well
2. Set aside for 10 minutes
3. Add corn, gently mix in
4. In a second bowl, add avocados and remaining lemon juice, toss for even distribution
5. Add content of the second bowl to the first bowl, gently mix in
6. Place in refrigerator until ready to serve
7. Serve with toasted pita bread, tortilla chips or over Mexican entrees
