Oven Fried Chicken
I enjoy fried chicken, however, I am always concerned by the amount of oil being used. Here is my oven fried chicken recipe which uses less oil.

Directions
4 lb. chicken legs and thighs
1 tbsp. all purpose meat seasoning
1/2 tbsp. black pepper
1 tsp. mustard powder
1/2 tsp. garlic powder
1/2 tsp. salt
1 cup all purpose flour
1/2 cup corn starch
1 large egg
1/4 cup milk
1 tbsp. lemon juice
1/4 cup vegetable oil
1. Wash the chicken pieces in lemon juice and cold water
2. Pat dry the chicken pieces
3. Combine the dry seasonings
4. Divide the combined seasoning in half
5. Add one half of the combined seasoning to the chicken pieces and stir
6. Marinate the chicken pieces for at least 30 minutes (preferably overnight)
7. Beat the egg and combine with the milk
8. Combine the other half of the combined seasoning with the corn starch and flour
9. Dip the chicken pieces in the egg and milk mixture and then coat in the flour mixture
10. Add the oil to a large skillet over medium heat. Heat until hot
11. Add the chicken pieces to the skillet and fry, 2 minutes per side
12. Remove the chicken pieces and place on a baking rack
13. Bake the chicken pieces in the oven at 350 degrees F, for 1 1/4 hour
14. Turn the chicken pieces occasionally
15. Serve
