1 pound boneless skinless chicken breast
1 tablespoon apple cider vinegar
1/4 cup vegetable oil
1/3 cup buffalo sauce
1/2 cup brown sugar
1/4 teaspoon salt
1/4 teaspoon red pepper flakes
1/2 cup cornstarch
2 large eggs, beaten
Garnish
Scallions (or green onions), chopped
1. Cut chicken breast into 1-inch chunks and rinse
2. Preheat oven to 350 degrees F (175 degrees C)
3. Line a 13 x 9-inch baking dish with aluminium foil and lightly oil or coat with non-stick cooking spray
4. In a medium bowl, mix the sugar, salt, red pepper flakes, buffalo sauce and apple cider vinegar. Set aside
5. Beat eggs in a separate bowl. Set aside
6. In a large bowl, gently toss chicken pieces with cornstarch. Dip the chicken pieces into the beaten eggs
7. Heat oil in a large frying pan over medium-high heat. Once hot, fry chicken pieces until golden brown but not fully cooked, 3-4 minutes. Transfer chicken to a paper towel-lined dish
8. Add chicken to the prepared baking dish and top with the buffalo sauce mixture
9. Bake for 45 minutes, turning chicken pieces every 15 minutes
10. Serve over white rice and top with the chopped scallions, if desired
