1/4 cup vegetable oil
2 ripe plantains
1. Heat oil in a medium (9-inch) frying pan over medium heat. Until it's hot enough to sizzle when you add a bit of plantain
2. Peel the plantains and cut them in half. Slice the halves lengthwise into thin pieces
3. Add the pieces to the oil (the oil should come halfway up the side of the pieces) and fry until golden-yellow in color, turning the pieces about every minute
4. Remove the pieces and place on paper towels to drain excess oil
