Directions
For Stuffing
1 lb potato, peeled and cut into 1/4-inch cube
1 tablespoon oil
2 garlic cloves, peeled and minced
1 cup peeled and finely chopped onion
1 tablespoon chopped fresh coriander
1/2 teaspoon turmeric
2 teaspoons garam masala
2 teaspoons lemon juice
1 cup green peas (boiled)
Salt to taste
Red chili pepper flakes to taste
For Cover
1 cup all purpose flour
Water (to knead dough)
2 tablespoon oil
Small amount (pinch) of salt
For Stuffing
1. In a frying pan, heat oil over low flame until it sizzles
2. Add onions and garlic and saute. Don’t brown
3. Add coriander, turmeric, chili pepper, garam masala and salt needed. Cook for 2-3 minutes, stirring frequently
4. Add cubed potatoes and green peas. Cover and cook for 10 minutes, stirring frequently, until the potatoes and peas are soft
5. Add few drops of lemon juice to taste
6. Now the stuffing is ready
For Cover
1. Mix the flour, salt and oil
2. Add a little water at a time
3. Knead well until dough is soft and pliable
4. Make small rolls of dough and roll it into a 5" diameter circle
5. Cut rolls into two halves (semi-circle)
6. Take one semi-circle and fold it like a cone
7. Place a spoon of filling in the cone and seal the third side using a drop of water
8. Heat oil and deep fry the cones until golden brown (fry on a medium flame)
9. Now the samosa is ready
