Salt mackerel is best served with boiled dumplings and green bananas. It is a traditional Jamaican breakfast.

Directions
1 lb. salted mackerel
1 large onion, sliced
1 large tomato, chopped
1/4 cup vegetable oil
3 cups water
1. Bring a pot of water to a boil, add the salted mackerel to remove excess salt. About 10 minutes
2. Discard the water, wash salted mackerel with fresh tap water
3. Cut the salted mackerel into 2-inch pieces, removing the bones is optional
4. In a frying pan, heat the vegetable oil over low flame until it sizzles
5. Add onion and tomato and saute until translucent. About 3 minutes
6. Add salted mackerel and cook for 5 minutes, gently stir
7. Remove from heat and serve
