Ingredients
Directions
1/4 lb. saltfish (salted cod fish)
1 1/2 cups flour
2 cups water
1/2 cup vegetable oil
1 green onion (sliced)
1/4 tbsp. salt
1/4 tbsp. black pepper
1/4 tbsp. curry powder (optional)
1. Boil the saltfish in water for 30 minutes
2. Flake the saltfish, removing the bones
3. Place the flour in a mixing bowl
4. Stir in the saltfish, onion, curry, salt and black pepper with the flour
5. Slowly add water to make a smooth batter. Batter should be thick and of a dropping consistency
6. In a frying pan, heat the vegetable oil over low flame until it sizzles
7. Drop batter by tablespoons full into the frying pan, fry each side for 3 minutes
8. Place the fritters on paper towel to absorb excess oil
9. Serve hot
