Jamaican Jerk Chicken
Jerk chicken is a popular Jamaican recipe and is available at any Jamaican event. This is a great recipe for summer BBQs.

Directions
1 whole chicken, cut in quarters (skin off) or 6 leg quarters
2 tbsp lemon juice
2 cups jerk sauce
1. Wash chicken in lemon juice
2. Pour 1/2 cup jerk sauce over chicken and let marinate at least 2 - 4 hours or overnight
3. Pour chicken, 1/2 cup jerk sauce in a baking dish and bake covered for 45 minutes at 350 degree F, turning chicken half way through
4. Remove chicken from baking dish, place on baking/cooling rack (brush cooling rack with oil). Line a cookie sheet with aluminium foil and place chicken (while still on the rack) on the cookie sheet
5. Bake at 400 degree F for 15 - 20 minutes, brush with remaining jerk sauce every 2 - 3 minutes and turn half way through (this procedure is to dry out some of the juice in the chicken and get it a little crispy)
6. Chop chicken in small bite size pieces, pour remaining sauce and bake for 5 minutes at 400 degree F
7. Serve hot
NOTE: Skip steps 3 to 6 if doing the chicken on a grill. Grill the chicken over low to medium flame and brush the chicken with sauce towards the end
