Ingredients
Directions
1 can (19 oz) gungo peas (also called pigeon peas)
1 can (14 oz) coconut milk
2 cups water
2 cloves garlic, chopped
2 stalks scallion (or green onion), chopped
1 teaspoon fresh thyme leaves
1 teaspoon salt, to taste
1 whole Scotch Bonnet pepper, do not cut
2 cups long grain rice
1. Wash and rinse the rice well, until the water is clear
2. Add the gungo peas with liquid, coconut milk, water, garlic, scallions, thyme leaves, salt and whole Scotch bonnet pepper to a large pot. Bring to a boil.
3. Add the rice, cover pot and boil on high for 3 minutes
4. Reduce heat to low, and simmer for 20 minutes or until all the water is absorbed
5. Remove the scallion stalks and whole Scotch Bonnet pepper
6. Fluff with fork before serving
