These fluffy pancakes are my little one's favorite breakfast item.

Ingredients
Directions
2 cups all-purpose flour
3 tbsp sugar (white)
1/2 cup melted butter
2 tbsp baking powder
1 tsp salt
1 1/2 cup milk
2 eggs (beaten)
1. In a bowl, mix together the flour, baking powder, salt and sugar. Pour in the milk, beaten eggs and melted butter. Whisk until the batter is smooth
2. Set aside for at least 10 minutes to rest if you have time, or start cooking straight away
3. Heat a griddle or frying pan, which is greased with a little butter, over medium high heat
4. Pour the batter onto the griddle or into the frying pan, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot
