24 cups water
6 cups dried Sorrel (rinsed under cold water)
2 ½ cups chopped ginger (peeled and washed)
2 teaspoon pimento (allspice) seeds
½ teaspoon whole cloves (optional)
Sugar (sweeten to taste)
White rum (optional)
1. Bring water to boil
2. Add ginger, pimento seeds (allspice) and whole cloves to boiling water, let boil for 10 minutes. This process is to extract the flavor.
3. Remover water from heat, then add dried sorrel, cover and left to steep overnight (12 hours or more)
4. Use cheesecloth or a very fine mesh strainer to strain the sorrel liquid (this process can be repeated
5. Sweeten the sorrel liquid to taste
6. Add white rum (optional)
