Ingredients
Directions
2 cups diced coconut
2 teaspoons shredded ginger
3 cups brown sugar
1 cup water
1. Place the diced coconuts, shredded ginger, sugar and water in a thick pot (preferably a Dutch pot)
2. Put stove on medium heat and boil, stir regularly
3. Boil until the water is gone and the sugar is like caramel and sticky, about 1 hour
4. Quickly (don't allow the mixture to harden in the pot) use a spoon to scoop out the mixture to create 2-inch wide mounds on greased paper or aluminium foil
5. Each mound should be placed in a separate heap on the greased paper or aluminium foil
6. Let the drops cool and harden, about 30 minutes
7. Serve
