Ingredients
Directions
3 cups all purpose flour
1/2 cup cornmeal
1/2 teaspoon salt (for dough)
1/2 teaspoon salt (for cooking)
1 1/2 cup cold water (for dough)
6 green bananas
1 teaspoon vegetable oil
6 cups water (for cooking)
1. Mix flour, cornmeal and salt together
2. Add cold water and knead into dough
3. Break off pieces and form the dough into slightly flattened biscuits, about 2 inches across
4. Wash the bananas thoroughly
5. Cut off both ends of the bananas
6. Score the skin by cutting from one end to the other end of each banana
7. Add the water, vegetable oil (this will prevent the bananas from turning brown) and salt to the pot
8. Bring to a boil, add the dumplings and green bananas. Cook for 20 minutes or until the dumplings and bananas are tender
9. Discard the banana skins (the skin should come off easily after cooking)
10. Serve warm
